This easy Japanese shaved ice recipe combines airy milk ice with sweet homemade strawberry sauce and a drizzle of rich condensed milk. It’s light, fruity, and absolutely irresistible. Prep Time: 15 minutes (excluding freezing time for milk ice)

Ingredients

Milk Ice

  • 1 cup (240ml) Whole milk
  • 1 tablespoon (12g) Sugar
  1. Heat up the milk in a pot, add sugar and stir until dissolved.
  2. Pour into a tray and freeze for at least 6 hours, or until solid.

Strawberry Sauce (Ratio 1:0.6)

  • 100g Fresh or frozen strawberries
  • 60g Granulated sugar
  • 10g Lemon juice
  1. In a small saucepan, combine the strawberries, sugar and lemon and mix them evenly.
  2. Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens slightly (about 8–10 minutes).
  3. Remove from heat and let cool before blending it in a mixer.

Condensed Milk Sauce (Ratio 1:0.3)

  • 100g Whole milk
  • 30g Granulated sugar
  1. In a small saucepan, combine the milk and sugar.
  2. Cook over medium heat and stirring occasionally, until the sugar is dissolved and the liquid is thicken.

Assemble

  1. Using a shave ice machine and shave the frozen milk cubes into a fluffy, snow-like texture. Pile high in a serving bowl.
  2. Top the milk shaved ice with a generous spoonful of strawberry sauce.
  3. Drizzle the condensed milk sauce over everything.
